‘buddy’ // barrel fermented grisette // 3.7% This is a tribute to our beautiful rescue greyhound buddy. 15% of all sales (wholesale & online) will be donated to Amazing Greys. Brewed with 100% Australian grown grains. Hopped w/ Saaz (CZ) & Celeia (SL) in the boil to 27 IBU. This beer went through primary fermentation in a puncheon (500L) and a hogshead (300L) for 10 weeks. This was a cofermentation with our house saison strain, brett. brux & brett. claus. The ageing time was kept short to keep the funk restrained and retain a young, vibrant product. On November 27th 2021, we blended both barrels together and bottle conditioned for 8 weeks.
