This Barrel Aged beaut comes off the back of our success at GABS Festival with our festival exclusive Bramble Wild Ale which sold out at every event leg. Our legendary team of brewers, led by Head Brewer Ash Hazell and Head of Barrel Jacob Turoy, were inspired to capture those same Bramble-esque flavours in this second Barrel Project but also dial it up a notch.
‘Rubus’ being the scientific name for all your Bramble fruits is a nod to the massive amount of raspberries and blackberries that go into this Wild Ale and give it its distinctive bright red colour and rich Bramble flavours.
The specifics: A wild ale with a mix of bacteria and wild yeasts aged in Chardonnay Barrels for 30 months, and finished on 300g/L of raspberries and blackberries for an additional four months. The result is a bright red bramble-esque wild ale loaded with tart & jammy berry notes and wild yeast funk.
Tasting notes: A bright red bramble-esque wild ale loaded with tart & jammy berry notes and funk from wild yeast ageing. A light vinous barrel character is balanced by the refined acidity for a nectareous finish. Best served at 5-10°C
