Pine Hill is our cult classic Serrello, approachable yet expressive, structured to be poured in a stemmed glass and savoured. It opens with sesame crackers, dried fruit and fresh honey before delivering a smooth rye bread palate with lemon flower, creamy texture and a clean, lasting finish.

Soil - Pine Hill vintage was defined by generous early rainfall and late-season stress — a natural proving ground that separated exceptional malting lines from ordinary ones. The grains that thrived here carry concentrated flavour precursors and the protein-starch balance to express Pine Hill's distinctive black clay minerality in the glass.

Finish - Sesame crackers, celery and young basil waft by a party of dried fruits, spice and hints of fresh honey.

Each Malt Donkey release is brewed from single-origin barley, grown on a specific South Australian farm, then fermented and matured with the same patience you’d expect from a serious cellar wine.
