Australis is the next step from our Dark Emu collaboration with Australia Author, Bruce Pascoe.
A dark ale aged in oak and brewed with native grains. It’s been lifted with Chinotto syrup made by the Bertoncello Bros from O.MY Restaurant & Farm using Mountain Yuzu fruit, farm honey, and native aromatics like strawberry gum, lemon myrtle, and river mint.

The result is a dark beer with layers of citrus, gentle bitterness, and an oaky backbone.
Earthy, spiced, and quietly complex.
