Hyggebajer is our take on a classic Danish Christmas beer. First we brewed a base red ale, featuring pale ale malt and a touch of crystal malt. We then fermented it with a classic American ale yeast, in order to let the malt and spices shine. We used star anise in the kettle and we used English licorice in the fermenter. The spices are backed by just the right amount of sweetness and and body, to make this the perfect beer for winter hygge!
